Two Pepers Cook: Sopapillas

 if you know my husband, then you know he’s an awesome cook! our good friend even said once that the peper kitchen is one of the hidden gems of SLC ;) sometimes riley makes things up as he goes and it turns out amazing and sometimes he tries crazy delicious recipes. obviously this makes me very happy since I’m a horrible cook and I would starve without him.

the other night, he came home from class and decided he wanted to make sopapillas! sopapillas are a traditional New Mexican puff pastry similar to beignets! we had some at red iguana when Riley’s parents were in town and they seemed pretty simple to make. plus, I’m a sucker for anything cinnamon sugar so, I was in. Koda even watched and waited patiently :)

here’s the recipe!

3 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
4 to 6 tablespoons lard or vegetable shortening
1 1/4 cups warm milk
Vegetable Oil for frying

what to do:

In a large bowl, stir together flour, baking powder, salt and shortening. Stir in water; mix until dough becomes smooth. Cover and let stand for 15 minutes.

Roll out on floured board until 1/8 to 1/4 inch thick. try to roll into a rectangular shape in order to cut triangles. Heat oil in deep-fryer or pan to 375 degrees F. Fry until golden brown on both sides. Drain on paper towels.


     serve hot on a platter and sprinkle with cinnamon sugar and honey.

This is such a quick, easy, and yummy dessert that you can make anytime since you probably always have the ingredients! Enjoy!
